Bone marrow butter. Cave-aged gruyère. Limited run, third year running.
The Compound returns for summer 2026. We didn't change anything. We didn't need to. Bone marrow butter basted into the patty during the sear, cave-aged gruyère melted under the dome, charred scallion mayo on a toasted brioche. Available while the gruyère supply holds — last two years it lasted three weeks. Order accordingly.

What the grill lead does before anyone else shows up.
Del Santos arrives at SMASH CO. at 5am every morning he works. The flat-top gets seasoned. The beef — ground at 4:30am from the carcasses that arrived the night before — gets portioned and weighed. Every patty is 3.2oz. Every one. Del has done this for four years and has never once used a scale in front of us. "I don't need one," he said, when we asked him. He was right.

"THE BEST SMASHBURGER IN BROOKLYN" — NYT DINING.
We didn't pay for this. We also won't stop talking about it.
New York Times Dining published their annual Brooklyn burger ranking and SMASH CO. took the top slot. Pete Wells called The Classic "the kind of burger that makes you question why you ever ordered anything else." We printed the review and stuck it next to the flat-top. Marco read it once, nodded, and went back to the grill. Del didn't read it at all. Business as usual.

HOT HONEY MAYO: NOW PERMANENT.
Started as a limited special. Never leaving.
Hot Honey Mayo was supposed to run for six weeks as a winter special. We added it to a limited run of The Southpaw and sold out every batch. We got enough emails that we made it a permanent menu item in March. Wildflower honey, fermented chile, house mayo. The ratio is not up for discussion. It's available on any burger or as a $1.50 sauce side. It now outsells everything except The Sauce — which is saying something.
